Why Fries?
The origins of French fries are somewhat disputed, one theory is that they were first created in Belgium, where they were made by peasants who fried them in small batches of oil. When the rivers froze over and the fish were not available, they began to slice and fry potatoes instead.
During WW1 the story goes that American soldiers tasted fries for the first time in Belgium and brought the idea back to the United States. In 1802 Thomas Jefferson served French fries at a state dinner in the White House, perhaps that was the start of something great in America.
Regardless of where they were first created, it is clear that French fries have become a beloved and widely enjoyed food all over the world.
For our family once a space was available beside Subway in our building, we knew that French fries is an offering that we needed to consider. There were some potential franchises that we did consider but it is very rewarding to achieve something on your own without the need for limiting creative opportunity and huge startup expenses. This entrepreneurial spirit that has served our family well for many years.

Why fries? As we all know French fries are immensely popular and enjoyed worldwide, potatoes themselves are fairly inexpensive (although the process of making them and delivering a consistent quality product comes with a high cost). The popularity of poutine has grown significantly since it’s inception in Quebec in 1957.
Many people enjoy eating them as a snack, side dish or a complete meal and most importantly French fries can be paired with a variety of sauces, aioli’s and spices.
Our Rise to Fries Secret sauce has been very popular and is our first successful French fry sauce. It has a mayo base, Shorty’s spice and a few other “secret” ingredients that make it taste great. Our goal is to create more interesting sauces and aioli’s over time.
Our overall vision was to create our very own concept of deliciousness:
We offer locally grown hand cut twice fried French fries, poutine, specialty sauces and hot dogs. Our potatoes are from Lam Mer Farms with ethically sourced ingredients and ecofriendly packaging.
